Assistant Head Baker

Taffelbay is a bakery chain in the Copenhagen area. We are looking for an Assistant Head Baker to support our Head Baker in running daily production and to take charge when the Head Baker is away. You will make sure dough and make-up are produced to a high standard and on time, and that the team knows what to do on every shift.

What you will do

Run the Dough department together with the Head Baker: mixing, temperatures, resting times and getting dough ready on schedule

• Oversee Make-up (weighing and panning), so products are shaped, panned and ready for the ovens as planned

• Follow the production plan and adjust it during the day when volumes, sales or staffing change

• Check quality at each stage, from dough consistency and shaping to bake and finish, and correct deviations

• Act as deputy for the Head Baker and take decisions on production and quality in their absence

• Train and guide colleagues at the stations and help new team members learn our recipes and standards

• Make sure hygiene, cleaning and own-check routines are followed and records are completed

• Work closely with the Laminated Pastry team, the Scaling Room, the Night Bakery and Packing & Dispatch so handovers run smoothly

• Report stock needs and flag waste or shortages to Stores & Inventory in good time

• Help prepare for peak periods such as Fastelavn, Easter and Christmas

Who you are

• Strong baking skills in dough handling and shaping

• Well organised, with calm and clear leadership on the shift

• Good communicator in a multilingual team

• Careful about quality and hygiene

We offer

• Employment: salaried employee (funktionær) contract, full time, 37 hours per week

• Working hours: daytime hours, with one fixed weekday off and work every second weekend
